A good use for the over-ripe bananas at the bottom of the
fruit bowl, these
delicious muffins are quick and easy to make, and can double as both a healthy
snack and a wicked treat with the optional chocolate sauce!
Makes 12
Ingredients:
For the muffins:
2 cups vegetable oil
4 cups caster sugar
8 large eggs
12 mashed ripe bananas
8 cups all-purpose (plain) flour
4 teaspoons baking soda (bicarbonate of soda)
2 teaspoons baking powder
2 teaspoons salt
3/4 cup milk
1 teaspoon vanilla extract
For the chocolate sauce:
1 pound (454g) milk chocolate
1 cup milk
1/2 cup whipped cream
Instructions:
Preheat oven to 350F (180C, Gas Mark 4). Lightly grease and
flour a muffin tin.
Combine the oil and sugar in a large bowl, then beat in the
eggs and
bananas.
Sift the flour, baking soda, baking powder and salt together
and add them to
the mixture, followed by the milk and vanilla. Mix all the ingredients together
lightly.
Spoon the batter into the muffin tins, filling them about 3/4 of the way. Bake
15 - 17 minutes.
While baking the muffins, prepare the chocolate sauce topping by melting the
chocolate over simmering water in a double-boiler (or in the microwave). Once
the chocolate is melted, remove it from the boiler and add the milk and
whipped cream.
When the muffins are done, serve them whilst still warm and
drizzle them
with the chocolate sauce.
