Baked Chicken Parcels

The smell of these chicken parcels when you open them up is simply delicious! Vary the ingredients according to what you have on hand and what your kids will most enjoy. Children will enjoy helping you assemble the parcel! Good served with a side salad.

Ingredients:

4 chicken breasts
1 cup mushrooms (finely sliced)
2 cups potatoes (finely sliced )
2 tablespoons olive oil
1 tablespoon parsley (finely chopped)
2 tablespoon fresh lemon juice
Salt and pepper (optional)

Instructions:

Cut three or four slits on the top of each chicken breast to help them absorb flavors and cook through evenly.

Place all the other ingredients into a large bowl and combine.

Cut four sheets of aluminium foil large enough to make four parcels. Place one chicken breast and a handful of additional ingredients on each sheet. Close the edges together to make a loose square parcel shape, making sure that each parcel is completely sealed, that the juices won’t leak, and that you have left enough room in the parcel for the steam created by the cooking.

Place the chicken parcels on a baking tray, and bake in a preheated oven at 375F (190C, Gas Mark 5) for approximately 30 minutes or until the chicken is fully cooked.
