Breakfast Bagel Casserole

This savoury breakfast casserole is sure to become a firm favorite and is a great way to use up slightly stale bagels!

Serves 4 - 6

Ingredients:

3 plain bagels (thinly sliced)
12 eggs (beaten)
1/2 pound cooked ham (diced)
1/4 cup finely chopped onion
1 tablespoon fresh chopped parsley
1 cup grated cheddar cheese
1 cup milk
Salt and pepper to taste
2 tablespoons butter

Instructions:

Place the butter in a heavy skillet. Add the ham and onion. Sauté over a low heat until tender (approximately 2 minutes). Set aside.

Slice each bagel into 4 thin slices. Arrange 6 bagel slices at the bottom of a lightly greased baking dish. Top bagels with the ham and onion mixture, then top with the cheddar cheese. Finally finish with the remaining bagel slices.

In a separate bowl, whisk together the eggs, milk, parsley, and salt and pepper to taste. Pour the egg mixture over the bagel layers.

Bake at 375F (190C, Gas Mark 5) for approximately 30 minutes or until the eggs are firm and cooked through.
