Cheddar Melt

This is very quick to prepare but surprisingly good with a
stack of crisps, chips or crudités to dip into it. You can spice it up by adding
a pinch of cayenne or chilli powder if you wish.
Ingredients:
1 package of cream cheese softened
1 cup cheddar cheese
1/2 cup of mayonnaise
1/4 chopped green onion (spring onions)
1 small diced tomato
Preheat oven to 350F, 180C, Gas Mark 4.
Combine the cream cheese, cheddar cheese, and mayonnaise in a
large mixing bowl or blender. Fold in the onion and tomato.
Dollop the mixture into an ungreased 8"x 8" baking dish or
small earthenware casserole dish. Bake for 5-10 minutes, until the cheese has
melted thoroughly. Serve with tortilla crisps, pitta bread, crackers or
crudités.
