Cheddar Melt
This is very quick to prepare but surprisingly good with a stack of crisps, chips or crudités to dip into it. You can spice it up by adding a pinch of cayenne or chilli powder if you wish.
Ingredients: Combine the cream cheese, cheddar cheese, and mayonnaise in a large mixing bowl or blender. Fold in the onion and tomato. Dollop the mixture into an ungreased 8"x 8" baking dish or small earthenware casserole dish. Bake for 5-10 minutes, until the cheese has melted thoroughly.
