Teach your children the most important secret!

Cherry Cookies

Lindsay says: These are delicious all year round, but they work specially well for Valentine's Day if you garnish with a small cherry heart on top. Kids love to make these.

Ingredients:

1 cup butter
2 egg yolks
Pinch salt
1/2 cup confectioners' sugar (icing sugar)
2 1/2 cups all-purpose flour
1 teaspoon vanilla extract
36 drained maraschino cherries plus extra for garnishing if you like
Coconut flakes
Icing made with confectioners' sugar (icing sugar) mixed with a few drops of water, tinted pink with pink coloring

Heat oven to 350F, 180C, Gas Mark 4

Blend together the butter, egg yolks, vanilla extract, salt, confectioners' sugar and flour.

Take a small amount of dough in your hand, flatten it out and wrap it around a drained cherry. Bake on ungreased cookie sheet until golden brown (about 10 minutes).

Cool for a minute or two while you mix the icing. Dip each cookie quickly in the icing and then roll in coconut flakes. Garnish with an extra cherry cut into a heart shape, if you like.

Store in an airtight container.
