Chicken and Grape Salad In A Pitta

Lindsay says: Most children love pitta bread and are willing to be quite adventurous if they are allowed to fill one up .. it can be a good trick to get them to eat some healthy salad ingredients! Of course you can vary the ingredients to suit what you have on hand.

Ingredients:

2 cups cooked chicken breast, cubed
1 cup seedless red grapes, halved
1 cup finely chopped celery
1/2 cup slivered almonds (optional)
1/2 cup shredded (grated) mozzarella cheese
Your favorite salad dressing (ranch dressing works particularly well)
6 pitta pockets
1 cup shredded lettuce

Instructions:

Combine all the filling ingredients in a bowl and toss together lightly to distribute the dressing.

Cut the pitta pockets open and fill with some lettuce, then spoon the chicken mixture in too.
