Chicken Breasts Stuffed with Apple and Cheese
Lindsay says: These chicken breasts are quick to prepare and while they are
cooking in the oven you can get on with preparing the vegetables, laying the
table and so on! Apple and chicken are a popular combination for children.
Ingredients:
4 boneless, skinless chicken breasts
1 large apple, finely chopped
2 tablespoons shredded (grated) Cheddar or Swiss cheese
1 1/2 tablespoon dried bread crumbs
1 tablespoon (15g) butter
1/4 cup white wine or apple juice
1/4 cup water
Salt and pepper to taste
For the gravy:
1 tablespoon water
1 1/2 teaspoons cornstarch
Directions:
Mix together the chopped apples, cheese and bread crumbs.
Pound the chicken breasts to flatten, then divide the apple mixture between
them, putting a dollop into the centre of each breast. Roll up tightly and pin
closed with toothpicks or skewers, or tie with kitchen string.
Melt the butter in a large skillet (frying pan). Sauté each breast to a
golden brown. Add the white wine or apple juice and water, and cover. Simmer
over medium heat for 20 minutes, or until the chicken is thoroughly cooked.
Remove the chicken from the pan and keep warm. Mix the cornstarch and water
together to a paste, then stir into the liquid remaining in the pan and heat
gently until it thickens slightly. Pour over the chicken.
Serve with vegetables.
