Most children seem to love chicken and turkey these days - and it can be cooked and
presented in so many different ways it makes a perfect ingredient for a good
family meal. We hope you enjoy these chicken recipes with your family!

Simple Chicken Salad

This recipe goes together in a flash, and the result is a simple, tasty and
tangy salad which is perfect for summer lunches and picnics, or as the filling
for a crunchy sandwich. We also have a serving suggestion for a 4th of July
picnic!
Chunky Chicken Salad
The simple ingredients in this dish appeal to even the fussiest
of eaters, but the salad doesn't miss out on taste as a result! We've given
instructions below for making the salad from scratch, but of course it is an
excellent use of leftovers too.

Grape Salad in a Pitta (Pita)
Most children love pitta bread and are willing to be quite adventurous if they
are allowed to fill one up .. it can be a good trick to get them to eat some
healthy salad ingredients! Of course you can vary the ingredients to suit what
you have on hand.

Chicken Marsala
Although the "adult" version of this dish includes mushrooms and marsala wine -
neither of which go down well with my kids - this is a perfect family recipe. We
save the sauce for the grown-ups and give the kids "crunchy" chicken, and
everybody is happy!

"Sweet and sour" was a classic Chinese dish in the 1980s, but that was because
it has always been so popular with the family market! Kids love the sweet taste
(from the pineapple chunks) and it is sure to become a family favourite.

These are a firm family favourite in our house - and a very useful quick
meal to teach your teenagers to cook for themselves and their friends! Children
of all ages enjoy putting these together, and of course you can tailor them to
suit the likes and dislikes of the different members of the family.

Apple and Cheese
These stuffed chicken breasts are quick to prepare and while they are cooking in
the oven you can get on with preparing the vegetables, laying the table and so
on! Apple and chicken are a popular combination for children.
Sweet and Spicy Roast Chicken
The smell of this chicken while roasting is absolutely wonderful! The sweet and
spicy flavour appeals to kids, although you might want to cut down the pepper
for really young children. Delicious served with mashed potatoes and vegetables,
or just with a crunchy side salad.

Chow Fan (Chinese Fried Rice)
I was brought up in Hong Kong and "Chow Fan" was one of our
favorite family meals. The recipe I have given here is a very "anglicized"
version, and of course you can adapt it endlessly by adding your own family's
favorite vegetables and meats - or using up any leftovers. Most children love
it, so make it in large quantities!

Cooking chicken and bananas together may sound a little
strange to you… but kids really love this delicious and easy chicken recipe!

The smell of these chicken parcels when you open them up is
simply delicious! Vary the ingredients according to what you have on hand and
what your kids will most enjoy. Children will enjoy helping you assemble the
parcel! Good served with a side salad.
