Crock Pot Beef Barley Stew
The barley adds another dimension to this delicious crock pot
stew recipe, and makes it especially warming and nourishing on a cold winter's
evening!
Ingredients:
2 lbs. Cubed Stew beef
2 carrots (thinly sliced)
2 celery ribs (thinly sliced)
1 onion (diced)
1 (14oz) can diced tomatoes
3/4 cup barley
1 teaspoon dried basil or oregano
5 cups beef broth
Olive oil
Instructions:
Put the cubed beef in a frying pan with a little olive oil and brown over high
heat on all sides. Place the carrots, celery and onion in your crock pot, the
spoon the beef on top. Combine the tomatoes, barley, basil and beef broth and
pour over the beef and vegetables. Add a little salt and pepper. Cover and cook
on low for approximately 8 hours or until tender..
