Easy Quesadillas
Lindsay says: These are a firm family favourite in our
house - and a very useful quick meal to teach your teenagers to cook for
themselves and their friends! Children of all ages enjoy putting these together,
and of course you can tailor them to suit the likes and dislikes of the
different members of the family.

Ingredients:
8 tortillas
1 chicken breast (or chicken leftovers)
1 tablespoon oil
Butter or more oil for frying
1 package taco seasoning mix
1 can pinto beans, rinsed and drained
1 small package of Mexican rice cooked (or leftover rice)
2 cups shredded (grated) cheese - we use Cheddar
Any vegetables your children like - red pepper, broccoli etc
To serve:
Sour cream
Chopped spring onions
Instructions:
If necessary, cook your chicken in a large skillet with a small amount of water.
Remove, chop and shred. If using leftovers, just shred.
Heat the oil in a large frying pan (skillet) and add the
chicken. Sprinkle over the taco seasoning mix and add water according to the
package directions. Cook for a few minutes until the chicken is warmed
through and the sauce is well blended and slightly thickened.
You can either cook your quesadillas on an electric griddle or
on a large clean frying pan or griddle on the hob.
Turn on the heat and add a small amount of butter or oil to
the griddle. Place a tortilla into the griddle and top with chicken, beans, rice
and cheese. Don't put too much filling on, and keep it in the middle of the
tortilla or you will end up with an oozy mess at the next stage! Cover with a
second tortilla. Fry gently until browned on the bottom, and then carefully flip
to the other side and continue to fry, every so often pressing the tortilla
together with a spatula.
Slide out of the pan and slice into triangles. Serve with sour
cream and onions.
NB: If you have very large tortillas, you can fill the centre
of a single tortilla and fold it over before frying.
