Green Pea Dip

The beautiful color of this dip makes it particularly inviting to children, who might otherwise not enjoy eating their greens! Serve it with pitta bread (either "as is" or cut into triangles and crisped in the oven), tortilla chips, or vegetable crudités. You can obviously vary the ingredients (and the heat) of the dip to suit your family's tastes.

Ingredients:

1 cup frozen peas
1 medium cloves garlic, peeled
1 tablespoon olive oil (optional)
1 tablespoon fresh lime juice
1 tablespoon soy sauce
Dash of hot chilli oil or Tabasco sauce, to taste (optional)
3 tablespoons chopped cilantro (coriander leaves) or parsley (optional)
3 tablespoons plain yogurt or sour cream 

Instructions:

Leave the peas to come to room temperature - there is no need to cook them.

Place all the ingredients in a food processor and puree, scraping the sides as necessary.

Place in a bowl, garnish with an extra sprig of cilantro, and serve.
