Ham, Egg and Cheese Breakfast Casserole

Prepare ahead recipes like these are perfect for weekends and fill the house with a delicious small while cooking! You can of course vary the flavouring ingredients or leave them out if your family prefers.

Ingredients:

3 cups French bread, or other good bread, cubed
1 cup ham, diced
Cooking spray or butter
1 egg, beaten lightly
1 1/3 cups milk
1/2 teaspoon dry mustard (mustard powder)
1/2 teaspoon dried flaked parsley
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon paprika
Pinch black pepper
1/2 cup red bell pepper (red pepper), chopped
1/2 cup cheese, grated

Instructions:

Lightly grease a casserole dish.

Throw in the cubed bread, red pepper, ham and cheese and toss to combine.

In a small bowl, beat together the milk, egg and flavourings, and pour over the bread cubes. Cover and refrigerate for at least 3 hours, or overnight.

When you are ready to cook the casserole, heat the oven to 350 F (180 C, Gas Mark 4). Bake for approximately 40 minutes until lightly browned.
