Hearty Beef Crock Pot
The addition of potatoes, carrots and tomatoes gives this crock pot recipe a
delicious flavor and the "heartiness" of the name!
Ingredients:
1 1/2 pounds round steak (cubed)
8 new potatoes (cut into quarters)
1 cup baby carrots
1 onion (thinly sliced)
1 (14 oz) can diced tomatoes
1 1/2 cups beef broth
Chopped fresh parsley
Olive oil
Salt and pepper to taste
Directions:
Lightly oil a skillet. Sprinkle steak with salt and pepper and brown over
high heat on both sides.
Layer the potatoes, carrots, beef and onion in the crock pot.
Mix the beef broth with the tomatoes. Gently pour mixture over the other
ingredients into the crock pot.
Cover and cook on low for approximately 8 hours or until tender. Sprinkle
with parsley and serve.
