Rosemary says: I adore humous, and since I have been trying to
replace a lot of my carbohydrates with pulses I thought it would be worth trying
to make my own. And it’s been a great success. My first batch came out a bit
coarser and more solid than shop-bought, but to be honest I prefer it like that.
The coarseness obviously depends on how long you food process it for, and just
keep adding olive oil or water to make it less solid..
Ingredients:
250g (1.5 cups) dried chick peas
3 tbs tahini
Juice of 2 lemons
2 cloves of garlic, crushed or chopped finely
½ tsp ground cumin
Pinch baking soda
Olive oil
Salt and pepper
Instructions:
Soak the chick peas overnight in water. Drain, put into a
saucepan, cover with water bring and boil for 10 minutes. Then simmer for around
1 ½ hours until the chick peas are soft.
Place in the food processor with the tahini, lemon juice, garlic, cumin, and
baking soda. Add about 4 tbsp (1/4 cup) of olive oil to start. Switch on the
food processor. At this stage you will probably need to add more olive oil until
you get the desired texture. You can also add water, if you feel you have added
enough olive oil – a lower fat option!
Add plenty of salt and pepper and serve with strips of pitta bread and crudités
- very kid friendly!
