Honey Cake

This cake is sticky and delicious! Use cheap clear honey to
save on cost. The cake is made on one saucepan so clean-up is easy, and the kids
can help. Makes about 20 pieces.
You will need:
5 oz butter
4 oz dark or light soft brown sugar
¼ pint (150ml) clear honey
1 tablespoon milk
2 eggs
7 oz self-raising flour
Instructions:
Heat oven to 350F (180C, Gas Mark 4).
Grease and line a tray bake tin.
Put the butter, sugar, honey and milk into a saucepan and place over low heat
until the butter has melted and sugar dissolved. Allow to cool (important!)
Beat the eggs into the mixture one at a time and then stir in the flour. Pour
into the tin. Bake for 30 minutes or so. Turn out onto a wire rack and leave to
cool.
