Lemon Drop Cookies
These are very quick and easy to make, and easy to eat!
Perfect for cooking with your children too.
Ingredients:
1 1/2 cups plain flour
1 cup caster sugar
1/4 teaspoon salt
1 teaspoon baking powder
1/2 cup butter
1 egg
1 teaspoon lemon extract or 1 tablespoon fresh lemon juice
Instructions:
Preheat oven to 350F (180C, Gas Mark 4)
Beat the butter and sugar in a large bowl until creamy. Stir
in the egg and lemon extract.
In another bowl, sift together the flour, baking powder and
salt. Add the flour mixture to the butter mixture and combine.
Drop the mixture, by teaspoonfuls, onto lightly greased cookie sheets. Bake for
9 to 10 minutes, or until lightly golden.
Cool for 5 minutes before removing them to a wire rack to cool
completely.
