Make Ahead Fruit Salad

A quick and easy fruit salad with a zesty topping to liven up any
dessert table! Vary the salad according to what you have to hand.

Ingredients:

3 tablespoons chopped crystallized ginger
2 tablespoons lemon juice
1/4 cup honey
2 cups cubed cantaloupe
2 cups cubed honeydew melon
3 cups cubed fresh pineapple pieces
4 cups sliced strawberries
1 cup raspberries

Instructions:

For the fruit salad topping, combine the ginger, lemon juice and honey in a bowl and whisk until well combined.

Add all the fruit to the mixture except for the strawberries and
raspberries. Mix gently, making sure the topping cover the fruit completely.

Then, cover the salad and place it in the refrigerator for a minimum of 8
hours. Stir once during refrigeration.

Just before serving, add the berries and stir them in.
