Sweet And Spicy Roast Chicken

Lindsay says: The smell of this chicken while roasting is absolutely wonderful! The sweet and spicy flavour appeals to kids, although you might want to cut down the pepper for really young children. Delicious served with mashed potatoes and vegetables, or just with a crunchy side salad.

Ingredients:

1 large roasting chicken
4 tablespoons lime juice
1 1/2 tablespoon brown sugar
1 1/2 tsp pepper
1/2 tsp cinnamon
1/2 tsp ginger
1/2 tsp salt
1/2 tsp thyme
1 1/2 tsp olive oil

Directions:

Preheat oven to 325F (160C, Gas Mark 3).

Mix the lime juice and brown sugar together and set aside.

Blend the spices together.

Clean and prepare your chicken and place into a baking dish. Coat with olive oil and then sprinkle the spices over the top. Bake for 20 minutes.

Remove the chicken from the oven and pour the lime juice and sugar mixture over it before returning to the oven. Bake until chicken is no longer pink and juices run clear, basting every half-hour or as often as you remember!
