Teach your children the most important secret!

Turkey and Ham Pie

Lindsay says: I have been making this Turkey and Ham Pie with leftovers from Christmas Day for many years now, and my family looks forward to it almost more than our Christmas Day lunch itself! I don't follow a cut-and-dried recipe so I haven't given precise quantities - use your judgement according to how much meat you have and how many family members you are hoping to feed! It is quick, simple and delicious.

Ingredients:

Butter
Plain flour
Leftover turkey meat - diced
Leftover ham - diced
Good chicken stock (I make sure I have some in the freezer before Christmas)
Double cream - at least 1/2 pint
Sweet corn kernels - either canned or frozen, defrosted
Fresh parsley (optional)
Ready-rolled puff pastry (again, I put this in the freezer before the holidays)
Milk or egg for glazing


Instructions:

Put a large knob of butter into a large frying pan (skillet) and heat gently until melted, then sprinkle in 1-2 tablespoons of plain flour. Cook gently for a few moments, then gradually stir in the chicken stock. Simmer, stirring all the time, for a few moments more until it begins to thicken. Stir in the double cream.

Throw in your chopped meats and sweet corn and give everything another good stir, then sprinkle over the parsley.

Pour into your pie dish and cover with the puff pastry. Crimp around the edges of the dish and poke a few holes in the top with a fork or sharp knife before glazing with some milk or beaten egg. Put in a hot oven for 25-30 minutes until golden brown.

Delicious served with mashed potatoes and a green vegetable.
